Simple Lamb Chops

When you’ve got good lamb, you can’t go wrong with some juicy chops. Gorgeous with a fresh greek salad, and roast potatoes, or pumpkin mash and some charred broccolini.

Prep time: 20 mins  | Cook time: 10 mins  | Serves 2

Ingredients:

  • 4 lamb chops

  • juice of 1/2 lemon

  • 1 lemon cut in half

  • fresh thyme

  • 1/8 cup olive oil

  • sea salt

Method:

Put the lamb chops in a shallow dish and cover with 1/8 cup of oil, the lemon juice, and a couple of tablespoons of thyme leaves. Cover and let it sit at room temperature for 20 minutes. Turn the chops over a couple of times to allow all surfaces to marinate.

Pan-fry or barbecue on high for about 3 minutes either side, making sure the fat is rendered. Grill the lemon alongside the chops - and a little bit of butter if you like!

Serve right away sprinkled with sea salt and more fresh thyme leaves.
